The smell of these baking cookies will certainly rouse anyone from their slumber.

  • 1/2 Cup Unsalted Butter (Softened)
  • 1/2 Cup Unsweetened Applesauce
  • 1 Cup Sugar
  • 2 Eggs (Room Temperature)
  • 1 1/4 Cup Oatmeal
  • 1 Teaspoon Vanilla Extract
  • 1/2 Teaspoon Ground Cinnamon
  • 2 Cups Unbleached Flour
  • 1/2 Teaspoon Kosher Salt
  • 1 Teaspoon Baking Soda
  • 1 Cup Raisins
  1. Preheat oven to 375 degrees.
  2. In large-size bowl cream together butter, applesauce, and sugar. Add eggs and beat well. Mix in oatmeal, vanilla, and cinnamon. Add flour, baking soda, and kosher salt. Mix in raisins.
  3. Scoop dough with teaspoon and place onto ungreased cookie sheets. I like to line cookie sheets with parchment paper, but you don’t have to. Place in oven for 10 minutes until golden brown. Remove from oven and let cool on baking sheets 2 minutes before removing to wire racks to cool completely.
  4. Transfer to serving plate.
