Banana Nutella Sliders

Tomorrow is Bastille Day so I made these Banana Nutella Sliders.  A combination of French and American…think banana and peanut butter sandwiches. Elvis would have loved these.  Seriously, these sliders are addictive. 

INGREDIENTS

4 Croissants

13 Ounces Nutella Spread

2 Sliced Bananas

Powdered Sugar

On a serving plate carefully slice the 4 croissants horizontally.  Set the tops aside.  Heat the Nutella spread until it is warm, but not piping hot.  Divide the Nutella between the 4 croissant bottoms.  The best that you can evenly spread the Nutella so that it covers the croissant.  Arrange the banana slices on top of the Nutella.  If you want more bananas then slice an additional banana.  Carefully place the croissant tops on top and sprinkle with powdered sugar.  Serve immediately.  Serves 4

 

Victoria’s Chocolate Cake

Victoria’s Chocolate Cake

I have a real hankering for good old fashioned chocolate cake.  It doesn’t take long to make and is super yummy.  Everyone will be singing your praises if you decide to give this recipe a spin. 

INGREDIENTS

1 1/2 Cups Unbleached Flour

3 Tablespoons Unsweetened Cocoa Powder

2 Teaspoons Baking Powder

1 Cup Sugar

2 Teaspoons Vanilla Extract

3/4 Cup Buttermilk (you can use sour milk)

3/4 cup Melted Butter

3 Eggs

 

Preheat oven to 350° F. Grease a 9 inch cake pan and set aside. Sift the flour and then mix the flour, cocoa powder, baking powder, sugar and vanilla in a medium bowl. Melt butter and add to dry ingredients. Next add eggs and buttermilk to dry ingredients. Mix everything together until smooth with an electric mixer. Pour into pan and bake for 35 to 45 minutes or until wooden toothpick comes out clean. When done remove from the oven and cool on a wire rack. After the cake has cooled, slice cake in half to make 2 layers. It is easier to slice if the cake has been refrigerated for a couple of hours. Frost with Chocolate Butter Frosting. Use 1/3 of the frosting between the two layers, 1/3 on top and the rest around the cake. Victoria's Chocolate Cake should be served at room temperature. Serves 12

 

**To Make Sour Milk: 3/4 cup of milk and add either two tablespoons of vinegar or lemon juice. Let sit for five to ten minutes

 

Chocolate Butter Frosting

3/4 Cup Softened Butter (1 1/2 Sticks)

2 Cups Confectioners’ Sugar

1 Teaspoon Vanilla Extract

4 Squares (4 ounces) Semisweet Chocolate – Melted & Cooled

2 Squares (2 ounces) Unsweetened Chocolate – Melted & Cooled

 

In a large bowl, with a mixer at low speed, combine butter, vanilla and confectioners’ sugar.  Mix until almost combined.  Next add the semisweet and unsweetened chocolates.  Increase the speed to high, beat frosting until light and fluffy which should be for about one minute.  Makes about 2 1/2 cups

 

Strawberry Milkshakes

Strawberry Milkshakes

It’s hot out and time for a good old fashioned Strawberry Milkshake! 

 

INGREDIENTS

1/2 Pound Fresh Strawberries

3 Tablespoons Sugar

1 Teaspoon Vanilla Extract

1 Pint Good Quality Vanilla Ice Cream

1/2 Cup Milk

 

Hull and slice the strawberries.  Place the sliced strawberries in a medium size mixing bowl.  Add the sugar and vanilla extract.  Stir to combine and let sit out for 1 hour.  In a food processor or mixer place the strawberry mixture, ice cream and milk and blend until smooth.  Pour into glasses and serve immediately.  Serves 2

 

Victoria’s Blueberry Crisp

Victoria’s Blueberry Crisp

This is a great dessert to make while blueberries are in season.  If you bring my blueberry crisp to a picnic or potluck you are sure to be a big hit.

INGREDIENTS

4 Cups Fresh Blueberries

1/4 Cup Light Brown Sugar

4 Tablespoons Unbleached Flour

1 Teaspoon Ground Cinnamon

 

Topping:

1/2 Cup Old Fashioned Oats

1/2 Cup Unbleached Flour

1/2 Cup Light Brown Sugar

1/4 Cup Sugar

1/2 Teaspoon Ground Cinnamon

12 Tablespoons Cold Butter

 

Preheat your oven to 350° F.  Pour the blueberries into a 9 inch glass baking dish.  In a medium size bowl combine 1/4 cup light brown sugar, 4 tablespoons unbleached flour and 1 teaspoon ground cinnamon.  Pour the mixture over the blueberries and gently mix.  For the topping combine 1/2 cup old fashioned oats, 1/2 cup unbleached flour, 1/2 cup light brown sugar, 1/4 cup sugar, 1/2 teaspoon ground cinnamon and 12 tablespoons gold butter in a medium size bowl.  Cut in the butter until the mixture looks like coarse crumbs.  You can achieve this by using either a pastry blender or two forks.  Sprinkle the topping over the blueberries and bake in the oven for 50 minutes until your crisp is bubbly around the edges.  Serve warm with vanilla ice cream.  Serves 6

July 4th S’Mores

The first published recipe for S’Mores is attributed to Loretta Scott Crew whose recipe appeared in 1927’s Tramping and Trailing With The Girl Scouts. Graham crackers with melted marshmallows and chocolate prepared over a campfire, this camping favorite is great for our nation’s birthday!  Since 1927 there have been many variations of the famed S’More.

 

INGREDIENTS

4 Large Marshmallows

4 Graham Crackers

4 (1.5 Ounce) Chocolate Bar

 

Heat the marshmallows over an open fire until they begin to brown and melt.  Careful not to burn them.  Break the graham crackers in half.  Place the chocolate bars between the graham crackers and the hot marshmallows.  Let the marshmallows cool a bit before eating so that you don’t burn your mouth. 

Makes 4 S’Mores.

 

Here are some inventive variations that you might want to try.  Use shortbread cookies instead of graham crackers.  Use Reese’s Peanut Butter Cups instead of chocolate bars.  Use chocolate graham crackers instead of regular graham crackers and marshmallow fluff instead of toasted marshmallows.  How about using dark chocolate instead of milk chocolate and a bit of blackberry preserves on your graham crackers?  Or try using Nutella instead of chocolate.  Throw on some raspberries while you’re at it. 

 

OR you could make a S’Mores Milkshake. 

Broil 8 marshmallows and turn until both sides are brown.  In a food processor or mixer blend 1 pint of chocolate ice cream, 3/4 cup milk, 1 teaspoon vanilla, 1/8 teaspoon kosher salt and 6 of the toasted marshmallows.  Top with crushed graham crackers and the 2 remaining toasted marshmallows.  Makes 2 milkshakes.

Lemon Parfait

Lemon Parfait

This dessert looks like it took all day to make, but actually is pretty easy.  The only trick is that you need to chill for a few hours so you will need to plan ahead a bit. 

 

INGREDIENTS

1/2 Cup Strained Lemon Juice

1 Tablespoon Grated Lemon Rind

3 Large Egg Yolks

1 Cup Sugar

3 Large Egg Whites

1/8 Teaspoon Cream of Tartar

1/8 Teaspoon Kosher Salt

1 Cup Chilled Heavy Cream

3 Tablespoons Powdered Sugar

Quartered Lemon Slices For Garnish

8 Small Shortbread Cookies

 

In a small saucepan combine the egg yolks, 1/2 cup sugar, lemon juice and lemon rind.  Beat well until combined.  Cook over a medium heat.  Stir CONSTANTLY until the mixture gets thick, but do not let it boil.  Remove from the heat and pour into a large bowl to cool.  In a separate large bowl beat the egg whites with the cream of tartar and kosher salt.  You want the egg whites to have peaks.  Now, add the remaining 1/2 cup sugar a little bit at a time.  Fold the egg white mixture into the lemon mixture.  In a chilled bowl beat the whipping cream until it has peaks.  Always be careful not to over beat so you don’t end up with butter.  Beat in the powdered sugar.  Take 4 parfait glasses and place 1 broken shortbread cookie at the bottom of each glass.  Place the lemon mixture over the broken cookie and alternate with the whipped cream until you come to the top of your parfait glass.  Do this to all 4 parfait glasses.  Garnish with quartered lemons and 1 whole shortbread cookie.  Chill for 3 hours.  Serves 4

4th of July Apple Pie

4th of July Apple Pie

 

What is more American than Apple Pie?  No 4th of July celebration is complete without a delicious homemade Apple Pie.  The secret here is to use a combination of tart apples, like Winesap or Granny Smith, and sweet apples like Fuji, Jonagold, Idared or Mutsu.  Your patriotic crowd will love this pie. 

 

INGREDIENTS

3 Tablespoons Unbleached Flour

2 Teaspoons Grated Lemon Zest

1/2 Teaspoon Cinnamon

1/4 Teaspoon Ground Allspice

1/8 Teaspoon Kosher Salt

2/3 Cup Sugar

1 Tablespoon Sugar

2 1/2 Pounds Apples Cut Into Wedges

1 Tablespoon Fresh Lemon Juice

Pastry Dough

1 Lightly Beaten Egg

 

Preheat your oven to 425° F.  Place a large baking sheet in the middle of the oven. 

In a large bowl whisk together the flour, lemon zest, cinnamon, allspice, salt and 2/3 cup sugar.  Gently toss with the apples and lemon juice.  Roll out 1 piece of your dough on a lightly floured surface with a lightly floured rolling pin.  You want your dough to be about 13 inches round to fit into a 9 inch glass pie plate.  Keep the other piece of dough in the refrigerator.  Trim the edge making sure to leave a 1/2 inch overhang.  Chill the shell while rolling out the dough for the top crust.  Roll out the top piece of dough on the lightly floured surface into an 11 inch round.  Now you are ready to spoon your filling into the pastry shell.  Cover with the top and trim leaving a 1/2 inch overhang.  Press the edges together then crimp.  Lightly brush the top of the pie with the egg and then sprinkle all over with the remaining tablespoon of sugar.  Cut 3 steam vents in the top of the crust with a small sharp knife.  Bake the pie on the hot baking sheet for 20 minutes.  Then reduce the oven temperature to 375° F. and continue to bake for 40 minutes until the crust is golden and the filling is bubbling.  Remove from the oven and cool your yummy pie on a rack for at least 2 hours.  Serves 6

 

Pastry Dough

INGREDIENTS

4 Cups Unbleached Flour

1 3/4 Cups Shortening

1 Tablespoon Sugar

2 Teaspoons Salt

1 Large Slightly Beaten Egg

1 Teaspoon Red Wine Vinegar

1/2 Cup Water

Mix the flour, shortening, sugar, salt, egg, red wine vinegar and the water together. Place in a ziplock bag. Let the mixture sit in the fridge for 1 hour. Separate into 4 balls of dough. Roll out on a floured surface and place in 9 inch pie pans. Bake in a preheated 425° F oven for 12 minutes for the unfilled crust or use the recipe for a filled pie crust. Makes 2 crusts with tops. The unbaked dough may be kept for 1 week in a ziplock bag in the fridge.

Classic Crème Brûlée

Classic Crème Brûlée

Crème Brûlée is also known as burnt cream, crema catalana or Trinity cream.  Consisting of a rich custard base topped with a layer of hard caramel it is normally served cold.  Crème Brûlée is traditionally flavored with vanilla, but it is sometimes flavored with lemon or orange zest.  The earliest known Crème Brûlée appeared in François Massialot's cookbook written in 1691.  Wherever Crème Brûlée got its start and whatever it is called I know one thing for sure I love this dessert.

 

INGREDIENTS

1 Quart Heavy Cream

1 Split & Scraped Vanilla Bean

1 Cup Vanilla Sugar (Divided)

6 Large Egg Yolks

2 Quarts Hot Water

 

Preheat your oven to 325° F.  In a medium saucepan pour the cream and add the vanilla bean and its scraped contents.  Cook over a medium high heat and bring it to a boil.  Remove from the heat and cover with a lid.  It will need to sit for 15 minutes.  Take out the vanilla bean and either throw it away or save for another use.  In a medium size bowl whisk together the egg yolks and 1/2 cup of the sugar.  Make sure that the sugar and egg yolks are well blended and just begin to lighten in color.  Add the cream a little bit at a time making sure to stir constantly.  Pour into six 8 ounce ramekins.  Put the ramekins into a large roasting pan.  Pour the hot water into the roasting pan just until it hits halfway up the sides of the ramekins. Bake for 40 to 45 minutes just until the Crème Brûlée is set, but still a bit wobbly in the center.  Remove the ramekins from the pan and put into the refrigerator for 3 hours. When you are ready to serve take out of the fridge at least 30 minutes before browning the sugar on the top.  Take the left over 1/2 cup of vanilla sugar and divide equally among the 6 ramekins.  Spread evenly on top.  Using a torch melt the sugar to form a crispy top.  If you do not have a torch then you can use the broiler.  Before serving let the Crème Brûlée sit for 5 minutes.  Serves 6

Pain Perdu

Pain Perdu

In honor of St. Anthony we are making Pain Perdu or “Lost Bread.”

What we call French toast, the French call Pain Perdu.

Baked in butter and served covered with powdered sugar, Pain Perdu is considered a dessert in France.

INGREDIENTS

6 Large Eggs

1 1/2 Cups Milk

1 1/2 Teaspoons Vanilla Extract

2 Tablespoons Sugar

1/2 Teaspoon Ground Cinnamon

12 Thick Slices French or Italian Bread

6 Tablespoons Unsalted Butter

Powdered Sugar

Preheat your oven to 400° F.  In a large size bowl whisk together the eggs, milk, vanilla, sugar and cinnamon until well blended.  Place the bread in a large shallow baking dish

slightly overlapping one another.  It is best to use day old bread.  If you don't have day old bread don't worry about it.  Pour the egg mixture over the bread and let sit for 30 minutes.

Turn the bread with a spatula so that it gets evenly moistened halfway through the sitting time.  Put the two oven racks in the middle of the oven.  Place 3 tablespoons of the butter on

two baking sheets.  Put in the oven and melt the butter for 1 minute.  Remove the baking sheets from the oven and make sure that the butter covers the entire baking sheet evenly. 

Arrange 6 slices of the soaked bread on each of the hot baking sheets.  Make sure to space them evenly.  Bake for 15 minutes and then turn them over to bake an additional 15

minutes.  You will want the bread to be puffed and evenly browned.  If you need to bake them a bit more then go ahead.  Remove from the oven and transfer to a serving platter.

Dust with powdered sugar.  Serves 12

Super Moist Chocolate Layer Cake

 

INGREDIENTS

1/2 Cup Softened Butter

2 Cups Sugar

5 Eggs (Room Temperature)

3 Tablespoons Vanilla Extract

4 Squares (1 Ounce Each) Melted & Cooled Unsweetened Chocolate

2 1/2 Cups Unbleached Flour

1 1/2 Teaspoons Baking Soda

1 Teaspoons Kosher Salt

1 1/2 Cups Buttermilk or Sour Milk

 

Preheat your oven to 325° F.  In a large size bowl cream together the butter and sugar until light and fluffy.  Add the eggs one at a time.  Stir in the vanilla extract.  Add the melted chocolate.  In a separate bowl combine the flour, baking soda and salt.  Add alternately to the batter along with the buttermilk.  Grease and flour two 9 inch cake pans.  Divide the batter evenly between the pans.  Place in the oven and cook for 40 minutes or until a wooden toothpick inserted in the center comes out clean.  Remove from the oven and cool for 10 minutes in the pans.  Remove from the pans and cool completely before frosting. 

 

Chocolate Frosting:

1 Cup Softened Butter (2 Sticks)

8 Ounces Softened Cream Cheese

2 Tablespoons Vanilla Extract

3 Cups Powdered Sugar

2 Tablespoons Milk or Cream

3 Squares (1 Ounce Each) Melted & Cooled Unsweetened Chocolate

 

In a large size bowl combine the butter, cream cheese and vanilla.  Beat until light and fluffy.  Add the powdered sugar and beat at a low speed.  Stir in the milk and melted chocolate.  Beat until fluffy.  Place one cake layer on a cake plate.  Spread a thick layer of frosting.  Place the second layer on top of the frosting and frost the top layer and sides.  Serves 10
