Pulling a tender, juicy roast chicken with crisp, golden brown skin out of the oven is so rewarding. For a simple side, roast a pan of in-season produce like spring onions, ramps, new potatoes or carrots during the last 20 minutes of cooking.
INGREDIENTS
1 Whole Chicken (4 Pound)
1 Teaspoon Sea Salt
1/2 Teaspoon Freshly Ground Pepper
Preheat oven to 425 degrees.
Remove neck and giblets from chicken. Trim off any excess fat from neck and tail end of chicken. Rinse bird with cool running water. Pat dry with paper towels, and season all over with salt and pepper.
Place chicken, breast side up, on a rack in a small-size roasting pan or a 9×13 inch-baking dish. Tuck wings back and behind bird to hold them in place. Roast, basting once or twice with pan juices, until skin is deep golden brown and juices run clear, about 1 1/2 hours.
An instant-read thermometer inserted in the thickest part of the thigh should read 165 degrees. Let chicken rest for 15 minutes and then carve.
To add fragrant flavor, stuff the cavity with a halved lemon or orange and a handful of fresh herbs like rosemary, thyme, and oregano.
Serve with an easy salad of greens topped with cherry tomatoes, mozzarella, and a drizzle of olive oil.

It’s that time of year again, in America, when the beer turns green and the aroma of corned beef and cabbage fills the air. The dish is so comforting, but just what is corned beef? The term has nothing to do with corn, but was the English term for a small granule, such as a grain of salt. In days before modern refrigeration, salting meat was a way to preserve it and keep it from spoiling.
Corned beef is an Americanized addition to the traditional Irish diet. While colcannon (boiled potatoes, cabbage, and leeks in buttermilk flavored with wild garlic) was a common Irish dish, as was brown soda bread, corned beef was produced primarily for export to England. Upon arriving in America, however, it’s thought the Irish chose to celebrate their holiday with food that was typically not available to them in their home country, so corned beef was added to the menu, as was white soda bread studded with currants and caraway.
Corned beef is typically made from beef brisket, which is a cut of meat from the breast or lower chest, but the rump, bottom round, and even tongue, can be used. In America, the term “corned beef” is used to describe both the cured meat and the canned stuff found on grocery store shelves. In Britain, they call the canned stuff “salt beef.”
To make corned beef the meat is simmered in a blend of corned beef spices that usually include peppercorns, garlic, mustard, tarragon, thyme, parsley, cloves, and nutmeg.
In New England, you most often see corned beef served as a St. Patrick’s Day main dish or in a sandwich. As the main ingredient in New England Boiled Dinner, corned beef often pairs with potatoes, carrots, turnips, and cabbage in a hearty, savory, brothy bowl of goodness. When used in a sandwich, the most popular corned beef sandwich is the Reuben. Considered the quintessential Jewish deli sandwich, a Reuben is toasted rye bread stuffed with hot slices of corned beef, usually piled high, and topped with sauerkraut, Swiss cheese, and either Russian or Thousand Island dressing.
In New England, a frequent point of interest is also whether you prefer red vs. gray corned beef. The difference is “Red” brisket is cured with nitrite, which gives the meat its signature color. “Gray” corned beef, which is considered the authentic New England variety, is not cured with nitrate, so color forms naturally as it brines.
If you have corned beef leftovers a New England favorite is corned beef hash, which is typically served for breakfast.

Old-School Mashed Potatoes
Mashed potatoes are as American as Thanksgiving itself. Variations range from sriracha to pumpkin spice foie gras mashed potatoes (I wouldn’t recommend that latter). At Thanksgiving, nothing beats a well-made bowl of classic mashed potatoes, however. As with many other deceptively simple dishes, there are reasons why sometimes you have good mashed potatoes, and other times you have fabulous mashed potatoes. Here are my well-kept secrets to make those fabulous ones, served piping hot, and ready for that giant ladle of gravy.
Potatoes with a high starch content (the kind used for baking) provide the traditional flavor and texture. The same starch that gives a baked potato its fluffy interior also contributes to perfect mashed potatoes. Yellow-fleshed varieties like Yukon golds or yellow Finns are excellent as well, but they turn out the same color as mashed turnips, which may be disconcerting to potato purists. If you live near a farmers’ market, take the potato farmers’ advice on local favorites as they may suggest an interesting heirloom variety that will become your favorite.
Purchase your potatoes about a week ahead of time and age them in a cool, dark place. Do not place them in the refrigerator. Mature potatoes are drier and mash up lighter. Please don’t let them sprout eyes, though.
Make mashed potatoes just before serving. Reheated mashed potatoes leave me shivering.
Make sure not to overcook the potatoes. They should just yield to a sharp knife when pierced. If the drained potatoes seem soggy, just return them to the pot and cook over a low heat for about 2 minutes, stirring constantly until they begin to stick to the bottom of the pot. Doing this forces the excess steam out of the potatoes and dries them out.
Mash the drained potatoes in the still warm cooking pot with HOT milk. A cold bowl and cold milk make for lumpy and lukewarm potatoes. The precise amount of milk is a matter of taste, so use more or less to reach your desired consistency.
You’ll need an efficient mashing utensil. Some cooks swear by a potato ricer (which does make the smoothest potatoes by the way), as long as you enlist another pair of hands to make the job go quickly. You may use an electric hand mixer. If you want to use a low-tech, old school hand potato masher, go to a restaurant supply store and get a big one, or the job will take forever. The potatoes will be cooling off by the second and we don’t want that happening. Never ever mash potatoes in a food processor or you’ll get starchy, sticky, gummy mashed potatoes that could be used for gluing kindergarten craft projects.
Season well with salt and pepper. Use your taste to determine amounts. I use kosher salt mostly, but you may use your favorite type of salt. White pepper is spicier than black pepper, but will give you pristine looking mashed potatoes. But, of course, use black if you want to.

Sweet Potatoes
Sweet Potatoes have a distinctive sugary and spicy flavor, which makes them an excellent addition to many savory dishes. There are two types of this highly nutritious tuber. One has cream-colored flesh and the other has an orange flesh. The orange flesh variety has a higher nutritional content because it is richer in the antioxidant beta-carotene. Both types are a good source of potassium, and contain plenty of nutritional fiber, vitamin C and carbohydrate.
When buying sweet potatoes, choose small or medium-size specimens, as the larger ones tend to be rather fibrous. They should be firm and evenly shaped. Avoid any that seem withered, have damp patches or are sprouting. They will keep for about 8 days if stored in a cool place.
Sweet potatoes can be cooked in any of the ways you would cook ordinary potatoes – roasted, boiled, mashed or baked. They also make delicious fries. If baking, scrub the potatoes well and cook exactly as you would ordinary potatoes. To boil, either cook in their skins and remove them after cooking, or peel and place in acidulated water. This prevents them from turning brown.

September is a wonderful time for enjoying the beautiful array at local farmers’ markets. September is a delightful time for gathering ingredients that will showcase fleeting flavors of summer. A walk among colorful baskets filled with fresh produce is incredibly inspiration.
Blazing scarlet tomatoes, sun-sweetened and fattened from their time on the vine, are joined by zesty green, bright yellow, and almost purple-colored varieties. Turn this beautiful rainbow into a final summer tomato salad by simply cutting thick slices of each colorful variety of tomato, and arranging them on a big platter. Drizzle the slices with olive oil and balsamic vinegar, sprinkle with a bit of sea salt, and finish the dish with finely minced basil.
Fill your shopping cart with crisp cucumbers, glossy purple or creamy white eggplant, pale green or buttery yellow summer squashes, string or wax beans, spicy jalapeno peppers, fragrant peaches, lush melons, sugary corn on the cob and great bunches of finely scented fresh herbs.
As September evenings grow quietly cooler, take pleasure in preparing dishes that feature these ingredients, such as nutmeg-scented roasted peaches, a delectable eggplant parmesan, velvety corn soup, garlic string beans or summer squash stuffed with ground lamb or turkey, breadcrumbs, fresh basil, oregano and parsley, cinnamon and bit of cheese. Cucumbers can be turned into simple refrigerator pickles, jalapeños can be roasted on the grill and packed away in the freezer, ensuring that a bit of summer will still be served as the season marches on.
There is also a hint of fall to be found at the farmers’ market. While all of the summer crops are still available to be savored, the new season is sneaking in. Freshly dug potatoes, dark purple plums, crisp early apples, succulent pears, Brussels sprouts, earthy mushrooms, carrots, cauliflower and kale will provide culinary creativity for weeks to come.
Cooking and eating with the seasons is the most excellent and efficient way to introduce high quality nutrients into the body. When we enjoy what nature has prepared for us, we are giving our bodies the gift of exceptionally luscious flavor, along with important healing properties. I can’t think of a better way to prepare a delicious life.

5 Ways To Use A Vegetable Peeler
The humble vegetable peeler has hidden talents.
Easily Peel Fruit: To peel soft fruits and vegetables, like tomatoes and peaches, you usually have to briefly dunk them into boiling water. Using a good vegetable peeler is so much easier and faster. Look for peelers with serrated blades for the best results and select not-too-ripe fruit.
Shaved Cheese: Give salads, pastas and roasted vegetables a restaurant-style finish by garnishing with generous amounts of shaved Parmesan or pecorino romano cheese.
Vegetable Pasta: Shave long strips of zucchini, carrots (even sweet potatoes and squash) to transform them into pasta substitutes. Serve raw or briefly steamed with your favorite sauce, or toss with a vinaigrette for a fresh and nutritious salad.
Spreadable Butter: Is there anything worse than trying to butter toast or bread with rock hard butter straight from the fridge? Use a vegetable peeler to scrape off thin and perfectly spreadable butter ribbons.
Chocolate Curls: Peel the edge of a slightly softened chunk of chocolate to create curls, or the flat surface of very cold chocolate to make shavings. Keep your creations in the freezer and use to garnish cakes, pies, puddings and seasonal fruit.

Cauliflower
Whether roasted, mashed, raw or added to pasta dishes, there’s something so comforting about cauliflower’s mild, creamy flavor. Plus, it’s one of the most nutritious vegetables around. What’s not to love?
Cauliflower is a member of the cruciferous family, along with broccoli, cabbage, and kale. These vegetables are an important part of a heart-healthy lifestyle, high in nutrients and fiber and very low in calories.
It’s easier than you might think to separate a whole cauliflower into florets, but if you’re really pressed for time, take advantage of prepared fresh or frozen cauliflower.
To prep cauliflower you will need to first remove the cauliflower’s leaves and cut out the core. Then break into evenly sized florets, cutting any very large ones. Add to a pot of boiling salted water and cook for about 5 minutes. Drain thoroughly. Rinse with cold water if you plan on using it later.
Cauliflower works great as a replacement for higher starch foods like rice, couscous, and potatoes. Steam and mash it to replace potatoes or pulse it in a food processor to create cauliflower “rice” that can be sautéed or steamed and served with curry or chili.
