Watermelon Cocktails

Watermelon Cocktails

 

These Watermelon Cocktails are refreshing and easy to make. Make sure to use good quality tequila and they will make any summer party a big hit.

 

INGREDIENTS

1/4 Cup Water

¼ Cup Sugar

14 Cups Diced Seedless Watermelon

¼ Cup Freshly Squeezed Lime Juice

8 Sprigs Mint Leaves For Garnish

8 Lime Slices For Garnish

1 ¼ Cups Good Quality Tequila

Ice

 

Pour the water and sugar into a small saucepan.  Bring the mixture to a simmer for 1 minute.  Remove from the heat and let cool.  In a blender or food processor puree the watermelon.  You want the watermelon to be nice and smooth.  Strain the watermelon over a large bowl and throw away any pulp.  You want to get as much watermelon juice as possible.  In a large pitcher combine the sugar water with the lime juice.  Add the watermelon juice and tequila.  Store in the refrigerator for 3 hours.  Pour the cocktails into tall glasses filled with ice.  Garnish with mint sprigs and lime slices and serve.  Serves 8

 

Coconut Cream Pie

Coconut Cream Pie

 

Forget the diner and make your own delicious Coconut Cream Pie.  It will be much better than the diner’s…trust me!

 

INGREDIENTS

Crust:

6 Ounces Animal Crackers

2 Tablespoons Unsweetened Shredded Coconut

1 Tablespoon Raw Sugar

5 Tablespoons Melted & Cooled Unsalted Butter

 

Filling:

1 Cup Whole Milk

14 Ounces Coconut Milk

1/2 Cup Unsweetened Shredded Coconut

1/2 Cup Plus 1 Tablespoon Sugar

3/8 Teaspoon Salt

5 Large Egg Yolks

1/4Cup Cornstarch

2 Tablespoons Unsalted Butter (Cut Into 2 Pieces)

1 1/2 Teaspoons Vanilla Extract

 

Whipped Cream:

1 1/2 Cups Cold Heavy Whipping Cream

2 Tablespoons Sugar

1/2 Teaspoon Vanilla Extract

1 Tablespoon Toasted Unsweetened Shredded Coconut

 

Move your oven rack to the lower middle and preheat to 325° F.  In a blender or food processor combine the animal crackers, coconut and sugar.  Pulse for about 20 seconds until the crumbs are almost powdery.  Pour the crumbs into a medium size bowl and add the butter.  Stir until the crumbs are evenly moistened.  Pour the moistened crumbs into a 9 inch pie plate.  Using the bottom of a drinking glass press the crumbs evenly into the bottom and up the sides of the pie plate.  Bake for 15 minutes until medium brown.  Remove from the oven and cool for 30 minutes on a wire rack. 

While the crust is cooling make the filling.  In a medium saucepan bring the coconut milk, while milk, shredded coconut, 1/2 cup sugar and salt to a simmer over a medium high heat.  Stir occasionally to make sure that the sugar dissolves.  In a medium size bowl whisk together the egg yolks, cornstarch and 1 tablespoon of sugar until well mixed.  Gradually pour about 1 cup of the hot milk mixture over the egg yolk mixture.  Whisk constantly and whisk well to combine.  Slowly add the remaining milk mixture to the yolk mixture in 4 additions.  Make sure to whisk constantly.  You don’t want to end up with scrambled eggs!  Return the mixture back to the saucepan and cook until thickened and the mixture reached a boil.  Whisk constantly for 1 minute.  The filling must boil in order to fully thicken.  Turn off the heat and whisk in the butter and vanilla until the butter is fully melted.  Give a stir and then pour the hot filling into the cooled pie shell.  Smooth the surface with a spatula.  Press plastic wrap directly against the surface of the filling and refrigerate for 4 hours until firm.  You may refrigerate up to 12 hours. 

Just before serving you want to make the whipped cream.  Beat the cream, sugar and vanilla with an electric mixer for 2 minutes until soft peaks form. Top the pie with the whipped cream.  To toast the coconut take a small dry skillet and toast 1 tablespoon of the unsweetened shredded coconut until it turns a golden brown.  Sprinkle the whipped cream with the toasted coconut.  Cut the pie into wedges and serve.  Makes one 9 inch pie – Serves 8

 

Cream Cheese Pound Cake

Cream Cheese Pound Cake

This cake is moist, tender, golden brown and very velvety.  It has all the richness and pure buttery flavor of classic pound cake, but with a delicate tang. 

INGREDIENTS

3 Cups Cake Flour

1 Teaspoon Salt

4 Large Room Temperature Eggs

2 Room Temperature Egg Yolks

1/4 Cup Milk

3 Teaspoons Vanilla Extract

3 Cups Sugar

24 Tablespoons Unsalted Butter (3 Sticks)

6 Ounces Softened Cream Cheese

 

Before you turn on the oven adjust the oven rack to the middle position.  Preheat your oven to 300° F.  Grease and flour 12 cup nonstick Bundt pan.  In a medium size bowl, combine the flour and salt.  In a 2 cup liquid measuring cup whisk the eggs, 2 yolks, milk and vanilla.  In a separate large size bowl, beat together (by hand or with an electric mixer) the sugar, butter and cream cheese for 3 minutes until fluffy.  Reduce the speed to low and very slowly add the egg mixture until incorporated.  The batter may look slightly curdled.  Add the flour mixture in 3 additions.  Scrape down the bowl as needed.  Give the batter a final stir by hand.  Scrap the batter into a prepared pan and gently tap the pan on the counter to release air bubbles.  Bake for 80 to 90 minutes.  Rotate the pan halfway through baking.  Remove from the oven and cool the cake in the pan on a wire rack for 15 minutes.  Remove the cake from the pan and cool completely, for about 2 hours.  Serve plain or topped with frosting or fruit.  Serves 12

Ham Cooked In Beer

INGREDIENTS

20 Pound Bone-In Ham

2 Cans Beer

Olive Oil

Preheat oven to 350° F. Grease 18 quart roasting pan with olive oil. Place the ham, with the fattier side up, in the roaster. Pour the beer over the ham. Place lid on roasting pan. Bake 6 to 8 hours or until cooked through. Let sit 15 minutes before slicing.

Deviled Eggs

Deviled eggs or eggs mimosa originated in ancient Rome. They are still popular across Europe. In France they are called oeuf mimosa; in Romania, oua umplute (stuffed eggs); in Belgium, The Netherlands and Germany, they are usually filled with caviar and served in a remoulade sauce and are known as “Russian Eggs.” In the United States Deviled Eggs are so popular that there are special dishes and carrying trays designed specifically for them.

INGREDIENTS

For 12 Deviled Eggs

6 Large Hard Boiled Eggs

3 Tablespoons Mayonnaise

1 Teaspoon Djon Mustard

1 Teaspoon Malt Vinegar

Salt & Pepper to Taste

Paprika

Boil eggs on high heat for about 15 minutes. Promptly chill eggs so that the yolks stay bright yellow. Chill for about an hour. Remove eggs from their shells and halve lengthwise with a sharp knife. CAREFULLY remove the yolks (like they are little babies) and place in a medium bowl. Mash the yolks with a fork and add mayonnaise, mustard, vinegar, salt & pepper. Carefully spoon the yolk mixture back into the egg white halves and garnish with a light dusting of paprika. Store in the refrigerator. *Note…be careful when using the salt on the deviled eggs as it is easy to over salt.

Spice Pound Cake

Spiced Pound Cake

INGREDIENTS

1 Cup Butter

1 ½ Teaspoons Ground Nutmeg, Mace or Cinnamon

½ Teaspoon Kosher Salt

1 2/3 Cups Sugar

5 Eggs

2 Cups Unbleached Flour

Have all the ingredients at room temperature. Soften the butter and add the spice of your choice and the salt. Beat for 4 minutes with an electric beater or 8 minutes by hand. Gradually blend in the sugar until fluffy, beating 2 minutes. Beat in the eggs one at a time. Finally, beat in the flour. Turn the mixture into a well greased and lightly floured bundt pan or 9×3 ½ inch tube cake pan. Preheat your oven to 350°. Place in the oven and bake for 50 minutes or until toothpick comes out cleans. Remove from the oven and place on a wire rack. Cool in the pan for 15 minutes. Turn out on a wire rack to finish cooling. Serves 8

Pan Roasted Herbed Fingerling Potatoes

These Pan Roasted Herbed Fingerling Potatoes are a flavorful addition to any springtime menu and perfect for an Easter Dinner.

INGREDIENTS

12 Scrubbed Fingerling Potatoes

3 Tablespoons Olive Oil

3 Tablespoons Victoria’s Dry Rub

Place the potatoes in a saucepan and cover with water. Set over a high heat and bring to a boil. Cook for 8 minutes. Remove from the heat and cool under cold running water. Once the potatoes are cool enough to handle, place the potatoes on a cutting board and slice in half lengthwise. Season the potatoes with Victoria’s Dry Rub. Heat a large sauté pan with the olive oil over a medium heat. Place the potatoes, cut side down, in the pan and cook for 3 minutes until browned and crispy. Turn the potatoes to the other side and cook for another 3 minutes. Remove from the oven and toss the potatoes with additional Victoria’s Dry Rub if you wish. Serve hot. Serves 4

Strawberry & Rhubarb Compote

Strawberry & Rhubarb Compote

Strawberries & rhubarb were meant to be together. The sweet, juicy berries mellow the tart, slightly astringent rhubarb. While there is nothing wrong with the traditional pie, I decided to make a sweet, jam-like, easy compote that is perfect for serving over pound cake or any cake for that matter. You can also serve it topped with ice cream or stirred into yogurt or oatmeal. The compote will keep, covered and refrigerated, for up to one week.

INGREDIENTS

1 Pound Hulled & Chopped Strawberries (3 Cups)

1 Cup Sugar

1 Tablespoon Lemon Juice

1 Pound Sliced ¼ Inch Thick Rhubarb

¼ Teaspoon Kosher Salt

2 Tablespoons Water

In a medium size bowl, toss the strawberries with ½ cup sugar and lemon juice. Next, transfer the strawberry mixture to a small nonreactive pan. Bring to a simmer over a medium heat. Cook for 3 minutes and stir often. Remove the strawberries and place them into a small bowl. Set aside. Meanwhile, in another small pan over a medium low heat, combine the rhubarb and remaining sugar, salt and the water. Simmer for 6 minutes, stirring often, until the sugar is dissolved and the rhubarb is almost tender. Using a slotted spoon, transfer the rhubarb to the bowl with the strawberries and combine. Finally, transfer the strawberry & rhubarb mixture to a medium size pan and cook for 10 minutes over a medium low heat. Remove from the heat and transfer compote to a bowl and let cool for 45 minutes until the compote comes to room temperature. Serve over cake, ice cream, yogurt or oatmeal. Makes 4 cups.

Victoria’s Chocolate Mayonnaise Cake

Victoria’s Chocolate Mayonnaise Cake

This cake is super moist. Don’t be afraid of the mayonnaise ingredient because that is what makes it so moist.

INGREDIENTS

2 Cups Sugar

2 ½ Cups Unbleached Flour

1 ½ Teaspoons Baking Soda

1 Teaspoon Salt

2 (1 Ounce Each) Squares Unsweetened Chocolate (Melted & Cooled)

1 Teaspoon Cinnamon

1 Cup Mayonnaise

1 Cup Water

3 Eggs

Preheat your oven to 350° F. Grease and flour two 9 inch round cake pans. In a large mixing bowl combine the sugar, flour, baking soda, salt and cinnamon. Set aside. In a medium size bowl combine the mayonnaise, water and eggs. With a mixer at low speed add the wet ingredients to the flour mixture. Beat for 30 seconds. Add the melted chocolate and beat for two minutes. Pour into the prepared pans. Bake for 30 minutes. Remove from the oven and cool in the pans on wire racks for 10 minutes. Remove from the pans and cool completely. Sprinkle with powdered sugar or fill and frost as desired. If you want to make this a bundt cake then pour the batter into a prepared bundt pan and bake at 350° F for 40 minutes. Cool in the pan on a wire rack for 25 minutes. Invert from the pan and cool completely. Frost as you like. Serves 12

Rodeo Ribs

Rodeo Ribs

Cooking the ribs uncovered helps to thicken the barbeque sauce, which is best if made two days ahead. Cut the ribs into small pieces to they are easy to pick up.

INGREDIENTS

4 Pounds Beef Short Ribs (Cut Into 2 Inch Lengths)

1 ½ Teaspoon Kosher Salt

1 ½ Teaspoon Freshly Ground Pepper

2 Tablespoons Olive Oil

1 Large Onion (Halved Lengthwise & Slivered)

1 Cup Beef Broth

2 Cups Rodeo Barbecue Sauce

Preheat your oven to 350° F. Sprinkle the ribs with the salt and pepper. Heat the olive oil in a Dutch oven or other heavy covered pot over a medium high heat. Brown the ribs well for 8 minutes. Remove the ribs to a plate and set aside. Add the onion to the pot and wilt the onions over a low heat, scraping up the brown bits. Return the ribs to the pot, placing them atop the onion. Place the pot in the oven and cook, covered for 30 minutes. Add the beef broth and cook covered for 45 minutes longer. Remove from the oven and add 4 ½ cups of the Rodeo Barbecue Sauce. Stir the sauce into the broth and spoon it over the ribs. Return the pot to the oven, uncovered, for 40 minutes, basting once or twice. Skim and throw away the fat. Serve with extra sauce if you like. Serves 6
