Cucumbers are so refreshing and as a salad compliment most meals. Soy sauce and rice vinegar give it a welcoming Asian flair.
- 1 English Cucumber or 2 Smaller Cucumbers (Sliced Thin)
 - 3 Tablespoons Rice Vinegar
 - 2 Tablespoons Soy Sauce
 - 1 1/2 Teaspoons Sugar
 - 1 Red Jalapeno Chile (Sliced Thin)
 - 2 Green Onions (Chopped)
 - 1 Teaspoon Chopped Fresh Dill
 
- In a medium-size bowl, combine sliced cucumbers, rice vinegar, soy sauce, and sugar. Add sliced jalapenos, green onions, and chopped dill.
 - Cover with plastic wrap and place in refrigerator for 1 to 2 hours. Serve cold or at room temperature.
 - Serves 4
