Berry Vanilla Cream Pie With Shortbread Crust

This dessert looks so pretty and is worth the effort.  I like to use a deep pie plate for this recipe.

INGREDIENTS

Crust:

1 1/4 Cups Unbleached Flour

5 Tablespoons Sugar

1/2 Cup Softened Butter

1 Teaspoon Kosher Salt

Preheat you oven to 325ºF.  In a large size bowl combine the flour, salt and sugar.  With a pastry blender cut in the butter until the mixture resembles crumbs.  Form the dough into a ball.  Place in an ungreased pie dish.  Put in the oven for 15 minutes. Remove from the oven and set aside. 

Vanilla Cream Pie Filling:

5 Egg Yolks

3/4 Cup Sugar

3 Tablespoons Cornstarch

2 1/2 Cups Half & Half

1 1/2 Tablespoons Butter

1 1/2 Teaspoons Vanilla Extract

1/2 Cup Fresh Blackberries

1/2 Cup Fresh Blueberries

To make the filling: In a large saucepan combine the sugar and cornstarch.  Gradually stir in the half & half.  Cook and stir over a medium high heat until the mixture is thickened and bubbly.  Reduce the heat and cook for another 2 minutes.  Stir occasionally.  Remove from the heat.  In a medium size bowl slightly beat the egg yolks with a fork.  Gradually stir 1 cup of the hot filling into the egg yolks.  Add the egg yolk mixture to the saucepan.  Bring to a gentle boil. Stir constantly. Reduce the heat to low and cook for another 2 minutes.  Stir constantly.  Remove from the heat.  Stir in the butter and vanilla. Stir until the butter melts.  Pour into the pie plate. Arrange the blackberries and blueberries on top.  Place into the oven and bake at 325º F for 30 minutes.  Remove from the oven and cool for 1 hour.  Place in the refrigerator for at least 3 hours before serving.  Serves 8

Thanksgiving Apple Pie

This time of year, everyone has room for a piece of pie or two.  Why limit yourself to just one?

INGREDIENTS

3 Tablespoons Unbleached Flour

2 Teaspoons Cinnamon

1/2 Teaspoon Grated Nutmeg

1/4 Teaspoon Kosher Salt

2/3 Cup Brown Sugar

2 1/2 Pounds Tart Apples

1 Tablespoon Fresh Lemon Juice

1 Tablespoon Vanilla Extract

2 Tablespoons Unsalted Butter

1 Large Beaten Egg

1 Tablespoon Warm Water

1 Tablespoon Sugar

1 Double Crust

Preheat your oven to 425° F.  Move your oven rack to the middle.  Peel and cut the apples into wedges.  In a large size bowl combine the flour, cinnamon, nutmeg, salt and brown sugar.  Toss the apples in with the sugar mixture.  Add the lemon juice and vanilla.  Let stand 15 minutes.  Roll out 1 piece of pastry dough on a lightly floured surface.  Roll the dough into a 13 inch round to fit into a 9 inch pie plate.  Place the dough into the pie plate. Roll out the remaining dough into the same size.  Gently pour the apple and sugar mixture into the pie shell.  Dot with the 2 tablespoons of butter.  Cover with the remaining rolled out dough and crimp the edges.  In a small size bowl whisk together the beaten egg and warm water.  Brush the top of the pie with the egg wash.  Sprinkle with the 1 tablespoon sugar and place the pie onto a baking sheet.  Put into the oven for 20 minutes and then turn the heat down to 375° F and bake for another 45 minutes.  The pie should be golden and the filling should be bubbling away.  Remove from the oven and set to cool for 2 hours.  Serve warm.  Serves 8

Mamie Eisenhower’s Pumpkin Pie

Mamie Geneva Doud Eisenhower (November 14, 1896 to November 1, 1979) was born in Boone, Iowa, but grew up in Cedar Rapids, Iowa; Colorado Springs, Colorado; Denver, Colorado along with spending time at the family’s winter home in San Antonio, Texas.  Soon after completing her education at Miss Wolcott’s finishing school she met Lieutenant Dwight D. Eisenhower.  On Valentine’s Day 1916, five months after the two met, he gave her a miniature of his West Point class ring to seal a formal engagement.

Mrs. Eisenhower was a gracious hostess and entertained an unprecedented number of heads of state and leaders of foreign governments.  She was noted for her outgoing manner, but guarded her privacy carefully as she suffered from Ménière's disease which is an inner ear disorder that affects one’s equilibrium. 

The First Lady was known as quite the penny pincher who clipped coupons for the White House Staff.  Her recipe for “Mamie’s Million Dollar Fudge” was reproduced by housewives all over the country after it was printed in many publications.  Here is Mrs. Eisenhower’s recipe for pumpkin pie, however. 

INGREDIENTS

1 Baked Pie Shell

3/4 Cup Brown Sugar

1 Envelope Gelatin

1/2 Teaspoon Salt

1 Teaspoon Cinnamon

1/2 Teaspoon Nutmeg

1 1/2 Cups Cooked Pumpkin

3/4 Cup Milk

3 Egg Yolks

3 Egg Whites

1/4 Cup Sugar

Mix the brown sugar, gelatin, salt, cinnamon and nutmeg in top of a double boiler.  Stir in the pumpkin and egg yolks.  Add the milk.  Heat over boiling water until thick.  Cool until cold.  Beat the egg whites with granulated sugar until firm peaks form.  Fold into the pumpkin.  Pour into the baked pie shell.  Chill.  Top with whipped cream to serve.  Serves 8

Single Crust Pastry Dough

If you want to make a double crust then just double the recipe. 

INGREDIENTS

1 1/2 Cups Unbleached Flour

1/2 Teaspoon Kosher Salt

1/2 Cup Unsalted Butter – Cut Up

1/4 Cup Ice Water

In a medium size bowl stir together the flour and salt.  With either two forks or a pastry blender cut in the butter until the pieces are pea size.  Sprinkle 1 tablespoon of the ice water over the flour mixture.  Toss with one of the forks.  Push the moistened pastry to the side of the bowl.  Repeat the moistening of the flour mixture by using 1 tablespoon of the ice water at a time until the flour mixture is moistened and you’ve used all of the ice water.  Gather the flour mixture into a ball and knead gently until it holds together.  On a lightly floured surface use your hands to slightly flatten the pastry.  Roll the pastry from the center to the edges into a circle which should be about 12 inches in diameter.  Makes 1 pie crust. 

Country Plum Tart

Country Plum Tart

Just spoon the filling in the center of the pastry circle and leave a 2 inch boarder around the filling.  Gently fold the pastry edge over the filling.  Pleat the pastry as necessary to keep it flat against the fruit.  Use the parchment to lift the pastry.  Sprinkle with cinnamon sugar. 

INGREDIENTS

1 Recipe For A Single Crust Pie

1/4 Cup Sugar

4 Teaspoons Unbleached Flour

1/4 Teaspoon Ginger

2 Cups Sliced Plums

1 Tablespoon Lemon Juice

Cinnamon Sugar

Preheat your oven to 375° F.  Prepare the pastry for a single crust pie.  On a large piece of lightly floured parchment paper roll the pastry into a 13 inch circle.  Slide the paper with the pastry onto a baking sheet and set aside.  For the filling you will want to get a large size bowl.  Stir together the sugar, flour and nutmeg.  Add the slice plums and lemon juice.  Toss until well coated.  Mound the filling in the center of the pastry.  Leave the outer 2 inches uncovered.  Fold the uncovered pastry up over the filling.  Pleat as necessary.  Sprinkle the filling and pastry with the cinnamon sugar.  Bake for 50 minutes or until the filling is bubbly and the crust is golden.  You may want to cover the edge of the tart with foil the last 10 minutes of baking to prevent overbrowning.  Remove from the oven and cool for 30 minutes on the baking sheet on a wire rack.  Makes 1 Country Plum Tart and serves 4.

Saint Swithin’s Day Apple Crumble Pie

My Saint Swithin’s Day Apple Crumble Pie is made with fresh apples, cinnamon and a brown sugar and butter topping. 

 

INGREDIENTS

1 Unbaked Pie Shell (9 inches)

6 Cups Peeled & Sliced Apples

3/4 Cup Sugar

1/2 Teaspoon Ground Cinnamon

1/4 Teaspoon Ground Nutmeg

1/8 Teaspoon Kosher Salt

 

Topping:

1/4 Cup Brown Sugar

1/4 Cup Unbleached Flour

3 Tablespoons Butter

1/2 Cup Chopped Pecans

 

Preheat your oven to 400° F.  Fill the pie shell with the apple slices.  In a small mixing bowl combine the sugar, cinnamon, nutmeg and salt.  Sprinkle the sugar mixture over the apples.  Next, in a small bowl combine the topping ingredients.  Sprinkle the topping ingredients over the top of the pie.  Bake for 50 minutes until the apples are tender and the topping is browned.  Remove from the oven and cool.  Serve with ice cream or whipped cream.  Serves 8

4th of July Apple Pie

 

What is more American than Apple Pie?  No 4th of July celebration is complete without a delicious homemade Apple Pie.  The secret here is to use a combination of tart apples, like Winesap or Granny Smith, and sweet apples like Fuji, Jonagold, Idared or Mutsu.  Your patriotic crowd will love this pie. 

 

INGREDIENTS

3 Tablespoons Unbleached Flour

2 Teaspoons Grated Lemon Zest

1/2 Teaspoon Cinnamon

1/4 Teaspoon Ground Allspice

1/8 Teaspoon Kosher Salt

2/3 Cup Sugar

1 Tablespoon Sugar

2 1/2 Pounds Apples Cut Into Wedges

1 Tablespoon Fresh Lemon Juice

Pastry Dough

1 Lightly Beaten Egg

 

Preheat your oven to 425° F.  Place a large baking sheet in the middle of the oven. 

In a large bowl whisk together the flour, lemon zest, cinnamon, allspice, salt and 2/3 cup sugar.  Gently toss with the apples and lemon juice.  Roll out 1 piece of your dough on a lightly floured surface with a lightly floured rolling pin.  You want your dough to be about 13 inches round to fit into a 9 inch glass pie plate.  Keep the other piece of dough in the refrigerator.  Trim the edge making sure to leave a 1/2 inch overhang.  Chill the shell while rolling out the dough for the top crust.  Roll out the top piece of dough on the lightly floured surface into an 11 inch round.  Now you are ready to spoon your filling into the pastry shell.  Cover with the top and trim leaving a 1/2 inch overhang.  Press the edges together then crimp.  Lightly brush the top of the pie with the egg and then sprinkle all over with the remaining tablespoon of sugar.  Cut 3 steam vents in the top of the crust with a small sharp knife.  Bake the pie on the hot baking sheet for 20 minutes.  Then reduce the oven temperature to 375° F. and continue to bake for 40 minutes until the crust is golden and the filling is bubbling.  Remove from the oven and cool your yummy pie on a rack for at least 2 hours.  Serves 6

 

Pastry Dough

INGREDIENTS

4 Cups Unbleached Flour

1 3/4 Cups Shortening

1 Tablespoon Sugar

2 Teaspoons Salt

1 Large Slightly Beaten Egg

1 Teaspoon Red Wine Vinegar

1/2 Cup Water

Mix the flour, shortening, sugar, salt, egg, red wine vinegar and the water together. Place in a ziplock bag. Let the mixture sit in the fridge for 1 hour. Separate into 4 balls of dough. Roll out on a floured surface and place in 9 inch pie pans. Bake in a preheated 425° F oven for 12 minutes for the unfilled crust or use the recipe for a filled pie crust. Makes 2 crusts with tops. The unbaked dough may be kept for 1 week in a ziplock bag in the fridge.

Mother’s Day Breakfast Cobbler

 

Don’t be afraid to make this fruit dessert for Mother’s Day breakfast.  Serve it with a scoop of plain yogurt on the top.  Everyone loves this breakfast treat. 

 

INGREDIENTS

1 Cup Unbleached Flour

2 Teaspoons Baking Powder

1/2 Teaspoon Salt

1 1/4 Teaspoons Ground Cinnamon

4 Tablespoons Chilled Unsalted Butter

1/4 Cup Room Temperature Honey

1/2 Cup Milk

1 Pound Ripe Plums (Split In Half & Pitted)

3 Tablespoons Light Brown Sugar

3 Tablespoons Wheat Germ

Plain Yogurt For Serving

 

Preheat your oven to 375° F.  Lightly butter and flour a medium size glass baking dish.  Whisk together the flour, baking powder, salt and 1 teaspoon of the cinnamon in a large size bowl.  Using a hand held pastry blender or two forks cut 3 tablespoons of the butter into the mixture until it is all crumbly.  In a small size bowl whisk together the honey and milk.  Add all at once to the dry ingredients.  Stir to combine all of the dry ingredients.  The spread the batter into the prepared baking pan.  Using a knife score an X through the skin of each plum half.  Arrange the plums skin side up in a single layer over the batter.  Mix the brown sugar, wheat germ and remaining 1/4 teaspoon cinnamon in a small bowl.  Cut in the remaining 1 tablespoon butter to form a cumbly topping.  Sprinkle the topping over the plums.  Bake for 30 minutes until the center of the cobbler is set and the topping is nicely browned.  Remove the cobbler from the oven and cool in the pan for 10 minutes.  Slice into wedges and serve topped with plain yogurt.  Serves 4

 

Coconut Cream Pie

Coconut Cream Pie

 

Forget the diner and make your own delicious Coconut Cream Pie.  It will be much better than the diner’s…trust me!

 

INGREDIENTS

Crust:

6 Ounces Animal Crackers

2 Tablespoons Unsweetened Shredded Coconut

1 Tablespoon Raw Sugar

5 Tablespoons Melted & Cooled Unsalted Butter

 

Filling:

1 Cup Whole Milk

14 Ounces Coconut Milk

1/2 Cup Unsweetened Shredded Coconut

1/2 Cup Plus 1 Tablespoon Sugar

3/8 Teaspoon Salt

5 Large Egg Yolks

1/4Cup Cornstarch

2 Tablespoons Unsalted Butter (Cut Into 2 Pieces)

1 1/2 Teaspoons Vanilla Extract

 

Whipped Cream:

1 1/2 Cups Cold Heavy Whipping Cream

2 Tablespoons Sugar

1/2 Teaspoon Vanilla Extract

1 Tablespoon Toasted Unsweetened Shredded Coconut

 

Move your oven rack to the lower middle and preheat to 325° F.  In a blender or food processor combine the animal crackers, coconut and sugar.  Pulse for about 20 seconds until the crumbs are almost powdery.  Pour the crumbs into a medium size bowl and add the butter.  Stir until the crumbs are evenly moistened.  Pour the moistened crumbs into a 9 inch pie plate.  Using the bottom of a drinking glass press the crumbs evenly into the bottom and up the sides of the pie plate.  Bake for 15 minutes until medium brown.  Remove from the oven and cool for 30 minutes on a wire rack. 

While the crust is cooling make the filling.  In a medium saucepan bring the coconut milk, while milk, shredded coconut, 1/2 cup sugar and salt to a simmer over a medium high heat.  Stir occasionally to make sure that the sugar dissolves.  In a medium size bowl whisk together the egg yolks, cornstarch and 1 tablespoon of sugar until well mixed.  Gradually pour about 1 cup of the hot milk mixture over the egg yolk mixture.  Whisk constantly and whisk well to combine.  Slowly add the remaining milk mixture to the yolk mixture in 4 additions.  Make sure to whisk constantly.  You don’t want to end up with scrambled eggs!  Return the mixture back to the saucepan and cook until thickened and the mixture reached a boil.  Whisk constantly for 1 minute.  The filling must boil in order to fully thicken.  Turn off the heat and whisk in the butter and vanilla until the butter is fully melted.  Give a stir and then pour the hot filling into the cooled pie shell.  Smooth the surface with a spatula.  Press plastic wrap directly against the surface of the filling and refrigerate for 4 hours until firm.  You may refrigerate up to 12 hours. 

Just before serving you want to make the whipped cream.  Beat the cream, sugar and vanilla with an electric mixer for 2 minutes until soft peaks form. Top the pie with the whipped cream.  To toast the coconut take a small dry skillet and toast 1 tablespoon of the unsweetened shredded coconut until it turns a golden brown.  Sprinkle the whipped cream with the toasted coconut.  Cut the pie into wedges and serve.  Makes one 9 inch pie – Serves 8

Perfect Pecan Pie

INGREDIENTS

9 Inch Pie Shell

3 Large Eggs (Room Temperature)

1 Cup Light Corn Syrup

1 Teaspoon Vanilla Extract

1/3 Cup Packed Light Brown Sugar

1/3 Cup Sugar

2 ½ Tablespoons Melted & Cooled Unsalted Butter

1/8 Teaspoon Salt

2 Cups Pecan Halves

1 Cup Chilled Heavy Whipped Cream (Optional)

Preheat the oven to 350° F. Line the pie pan with the pastry and crimp the edges and store in the refrigerator while preparing the filling. In a large bowl beat the eggs until blended, but not too much. You don’t want the eggs to be frothy. Stir in the corn syrup and the vanilla. In a separate small bowl mix together the brown sugar and granulated sugar. Make sure there are no lumps. Add the sugars, the melted butter and salt into the egg mixture. Spread 1 cup of the pecans on the bottom of the pastry shell. Pour the filling mixture over the pecans. Pour the remaining 1 cup of pecan over the top of the mixture and even them out. Bake the pie for 60 minutes until the filling is slightly puffed and the inserted knife comes out clean. Allow the pie to cool to room temperature. If you would like to serve whip cream then whip the cream and serve it on the side. Serves 8
