It’s jam-making time at Tiny New York Kitchen. Sweet, fresh strawberries get a little kick from lime and a touch of salt, fro a vibrant, fresh tasting jam.
- 8 Cups (40 Ounces) Strawberries (Hulled & Sliced)
- 4 1/4 Cups Sugar
- Zest Of 1 Lime
- Juice Of 1 Lime
- 1/2 Teaspoon Fine Sea Salt
- Place strawberries in large-size bowl. Toss with sugar. When sugar has dissolved into a syrup transfer contents of bowl to a strainer over a large-size saucepan and let drain for 1 hour.
- Set drained strawberries aside and bring syrup to a simmer over a medium-high heat. Cook 5 minutes until syrup boils. Add strawberries and cook 15 minutes until mixture thickens.
- Remove from heat and let cool briefly. Use a masher to crush berries for a smooth jam. Stir in lime zest, lime juice and sea salt. Transfer to glass storage jars. Let cool to room temperature and store in refrigerator.
