Victoria’s Herb Olive Oil

Some people don’t like tomato sauce on their pizza or they just like to mix it up a bit. Italians call pizza made without tomato sauce “pizza bianco,” which means white pizza. It’s very tasty and far from bland. Brush this hearty mixture over your dough before topping with your favorite toppings. You may also drizzle Herb Olive Oil over tomatoes, shrimp, and clams or on top of your pizza.

INGREDIENTS

1 Cup Olive Oil

1 ½ Teaspoon Garlic Powder

1 Tablespoon Dried Basil

1 Tablespoon Dried Parsley

1 Teaspoon Dried Oregano

1 Teaspoon Dried Rosemary

1 Teaspoon Dried Crushed Red Pepper

½ Teaspoon Spanish Paprika

½ Teaspoon Dried Thyme

1 Teaspoon Kosher Salt

½ Teaspoon Freshly Ground Black Pepper

In a medium size bowl whisk all of the ingredients together for about 30 seconds. Pour into your favorite bottle or jar. Let the herbs steep in the oil for at least 1 hour before using. Before using shake well because the herbs will have settled. Store tightly covered in a cool dark place for up to two weeks. Make 1 cup.

Pizza Sauce

Pizza Sauce

It is so easy to make your own sauce and it tastes much better than store bought. Use the tomatoes that you already love. The sauce doesn’t need cooking because the tomatoes are cooked when they are canned and the sauce cooks in the oven. Don’t use too much as the sauce should just kiss the dough. For an eight to ten inch pizza use just ¼ cup of sauce.

INGREDIENTS

28 Ounce Can Crushed Tomatoes

1 ½ Teaspoons Red Wine Vinegar

½ Teaspoon Garlic Powder

½ Teaspoon Dried Basil

¼ Teaspoon Dried Oregano

¼ Teaspoon Dried Thyme

¼ Teaspoon Freshly Ground Black Pepper

¼ Teaspoon Kosher Salt

¼ Cup Water

Whisk together all of the ingredients except for the salt and water in a medium size bowl. Whisk in ¼ cup of the water and ¼ cup of the salt. If you need more water to thin out the sauce then use a little more, but be careful not to thin out the sauce too much. You also don’t want the sauce to be too pasty. The sauce should easily spread over the dough. Makes 3 Cup

Roasted Pepper Pizza

Roasted Pepper Pizza

This pizza is so easy to make and very healthy. Homemade pizzas are lighter and puffier. They are more like the ones you find at artisan pizza restaurants. Make this Roasted Pepper Pizza for lunch, dinner or a snack. If you want to add meat go ahead, but I think it tastes great the way it is.

INGREDIENTS

Pizza Dough

2 Large Sliced Onions

2 Tablespoons Sugar

1 Tablespoon Balsamic Vinegar

16 Ounces Fire-Roasted Peppers (Drained and Sliced Into Strips)

1 ½ Cups Drained Salsa Fresca

1 Cup Sliced Black Olives

¾ Cup Grated Mozzarella Cheese

Remove the dough from the refrigerator 2 hours before you plan to make your pizzas. Preheat your oven to 500° F and arrange an oven rack one-third of the way up from the bottom of the oven. Place a pizza stone or invert a heavy baking sheet on the rack. In a large skillet heat 2 tablespoons of the olive oil over a medium heat. Add the onions, cook and stir for 10 minutes until the onions are limp and translucent. Stir in the sugar and balsamic vinegar and cook until the juices bubble. Transfer the onions to a strainer set over a bowl. Drain for 3 minutes. Return the juices to the skillet and cook over a medium heat for 5 minutes until the consistency is like honey. Remove from the heat and return the onions to the skillet and stir to coat. Set aside. To assemble, stretch each dough portion into a circle. Transfer one circle onto a pizza peel (a pizza size spatula) or rimless cookie sheet dusted with flour. Top in the following order using one-fourth of each topping per pizza: onion mixture, peppers, salsa, olives and mozzarella cheese. Using the peel or cookie sheet, slide the topped pizza onto the hot baking stone or baking sheet and bake for 5 to 7 minutes until the toppings are bubbling, the cheese is turning golden and the edges of the pizza are golden brown. Rotate the pizzas halfway through for even baking. Remove from the oven and let stand for 5 minutes before slicing. While one pizza is baking, repeat with the remaining dough and toppings. Makes 4 pizzas. Serves 8

Victoria’s Tuscan Soup

Winter time is such a great time for hearty soups. When I go to the specialty markets on Arthur Avenue I love to pick up dried beans to store away in the pantry for just that perfect weekend day that calls for a nice hearty soup. This is my Tuscan soup that is delicious. Make sure not to over-salt it as the ham will take care of adding the salt to the soup.

INGREDIENTS

15 Ounces Dried Large Italian Beans Soaked Overnight

1 Chopped Onion

1 Chopped Carrot

5 Tablespoons Olive Oil

8 Cloves Chopped Garlic

32 Ounces Chopped Ham

15 Ounces Chicken Broth

10 Ounces Crushed Cherry Tomatoes

20 Ounces Water

1 Teaspoon Freshly Ground Pepper

In a large saucepan, sauté the onions, garlic and carrot in the olive oil until tender. Add the chicken broth, water, soaked beans, pepper, cherry tomatoes and ham. Bring to a boil and boil for 10 minutes. Reduce the heat and simmer for 4 hours until the beans are tender. You may have to add more water depending how much your soup has cooked down. You may need to adjust your cooking time. The beans will be your guide. If you don’t have all day to cook this soup then go for the canned beans. I think the dried beans taste best however. Serves 4

Victoria’s Easy Classic Lasagna

This lasagna doesn’t take much time to make at all. If you want to make this a vegetarian lasagna just leave out the ground sirloin. It is so much nicer to make dinner from scratch and sit around the table discussing the day. Add some garlic bread and a salad and you have the perfect family meal.

INGREDIENTS

1 Pound Fresh Lean Ground Sirloin

30 Ounces Ricotta Cheese

28 Ounces Tomato Sauce

12 Ounces Shredded Mozzarella Cheese

8 Ounces (1/2 Of A 1 Pound Box) Lasagna Noodles

5 Ounces Grated Parmesan Cheese

Preheat your oven to 350° F. Cook the ground sirloin until browned. Add the tomato sauce to the browned sirloin and set aside. Cook the lasagna noodles until done (according to package instructions). Put the lasagna together by placing half of the noodles lengthwise in a 9×13 baking dish, covering the bottom. Spread half the Ricotta cheese over the noodles. Next, sprinkle half the Mozzarella cheese over the Ricotta cheese. Cover evenly with half of the meat sauce. Repeat with another layer. Sprinkle the top with the Parmesan cheese. Bake uncovered for 40 minutes until lightly browned and bubbling hot. Remove from the oven and let sit for 10 minutes before serving. Serves 6

Marinara Sauce

Marinara Sauce

INGREDIENTS

2 (28 Ounce Each) Cans Crushed Plum Tomatoes

1/3 Cup Olive Oil

2 Thinly Slice Garlic Cloves

10 Chopped Basil Leaves or 1 Tablespoon Dried

½ Teaspoon Sea Salt

¼ Teaspoon Freshly Ground Pepper

Heat the oil in a saucepan and add the garlic, salt and pepper. Cook slowly on low for 5 minutes. Add the remaining ingredients and bring to a simmer. Make sure to stir often. Cook for 30 minutes and serve over pasta or as a dipping sauce. Serves 4

Fettuccine Alfredo

Fettuccine Alfredo

INGREDIENTS

6 Ounces Butter

½ Cup Heavy Cream

1 Egg Yolk

½ Cup Grated Parmesan Cheese

½ Teaspoon Freshly Ground Black Pepper

1 Pound Fettuccine

While the fettuccine is boiling in 6 to 8 quarts of salted water, carefully melt the butter in a medium size saucepan. If you are cooking fresh fettuccine then it will only need to cook for 4 to 5 minutes. Add the heavy cream to the melted butter and half of the Parmesan cheese while whisking the mixture together. Drain the noodles quickly to prevent over drying. Do NOT rinse the noodles. Quickly whisk the egg yolk and toss in a large bowl with the hot cream sauce. Mix rapidly so as to serve piping hot. Add the remaining grated cheese and fresh pepper. Serve immediately. Serves 4

Bolognese Meat Sauce

Bolognese Meat Sauce

INGREDIENTS

1/3 Cup Olive Oil

2 Ounces Salt Pork

1 Clove Finely Chopped Garlic

½ Cup Chopped Onion

1 Cup Chopped Carrot

1 Cup Chopped Celery

1 Pound Ground Sirloin

½ Cup White Wine

½ Cup Light Cream

1 (28 Ounce) Can Peeled Crushed Tomatoes

1 Tablespoon Tomato Paste

1 Cup Peas

2 Ounces Butter

½ Teaspoon Sea Salt

½ Teaspoon Freshly Ground Pepper

½ Teaspoon Ground Nutmeg

In a medium size saucepan, heat the diced salt pork in the oil until the pork is light brown in color. Remove the salt pork and add the finely chopped garlic to the oil. Brown to taste. Add the onion and cook until translucent. Add the carrot and celery and cook until they are softened and begin to change color. Add the ground sirloin. Stir and cook until the sirloin turns brown in color. Pour in the wine and increase the heat to get a boiling action while stirring. Pour in the light cream and bring to a boil for 3 minutes. Dilute the tomato paste in the peeled crushed tomatoes and add to the saucepan. Add the peas to the saucepan and color. Allow to simmer over a low heat for 55 minutes. Add the butter, salt, pepper and nutmeg. Stir well and allow to cook at a simmer for another 15 minutes. Serves 4

Pesto Rosso

Pesto Rosso (red pesto) is a Sicilian red sauce made out of sun dried tomatoes and is also called Pesto alla Siciliana. This sauce is great on pasta as well as bruschetta. Serve with seafood or poultry. Pesto Rosso is definitely a very versatile sauce.

INGREDIENTS

1/3 Cup Chopped Water Packed Sun Dried Tomatoes (Drained)

2 Garlic Cloves

6 Fresh Basil Leaves

1 Garlic Clove

1 C up Fresh Basil Leaves

¼ Cup Olive Oil

1/3 Cup Parmesan Cheese

¼ Teaspoon Salt

¼ Teaspoon Freshly Ground Pepper

In a medium size sauce pan add the drained sun dried tomatoes, 2 cloves of garlic and 6 basil leaves. Cover with 1/3 cup of water and bring to a boil. Turn off the heat and let stand for 25 minutes. In a food processor or a blender place 1 cup basil leaves, olive oil, 1 garlic clove, Parmesan cheese, salt and pepper. Pulse until the mixture resembles a paste. Next, drain the tomato mixture and add to the food processor and finely chop. The sauce is now ready to use. If you are using as a pasta sauce you may want to thin the sauce with ½ cup of reserved pasta cooking water. Makes enough sauce for 1 pound of pasta. Serves 4

Toasted Open Faced Mozzarella Sandwiches

Toasted Open Faced Mozzarella Sandwiches

I like to serve these with soup. So easy to make and extremely yummy!

INGREDIENTS

6 Pieces Sliced Italian Bread

5 Tablespoons Butter

1 Teaspoon Garlic Powder

4 Tablespoons Dijon Mustard

2 Tablespoons Yellow Mustard

6 Slices Fresh Mozzarella

In a small size bowl, mix together the butter and garlic powder. Set aside. In a separate small size bowl, mix together the mustards and set aside. Preheat the oven to broil on low. Butter each piece of bread evenly and then smear an even layer of the mustard mixture over the butter layer. Put a piece of mozzarella cheese on top of each slice of bread. Line a baking sheet with parchment paper and place the sandwiches on the baking sheet. Place in the oven for 6 minutes. After 6 minutes turn off the oven and let the sandwiches sit for another 4 minutes. The cheese will not completely melt, but the sandwiches will be ready to eat. Take them out of the oven and place them on a serving plate. Serve warm. Serves 6
