Duck fat potatoes have a flavor all their own.
- 2 Pounds Yukon Golds
- 1 Teaspoon Kosher Salt
- 2/3 Cup Duck Fat
- Place large-size roasting pan in oven and preheat to 400 degrees.
- Peel potatoes and cut into slices. Place into large-size saucepan and cover with water. Add kosher salt and bring to boil. Simmer potatoes, uncovered, 8 minutes.
- While potatoes are simmering add duck fat to preheated roasting pan and return to oven for 5 minutes.
- Drain potatoes and give a good shake. Wait 2 minutes to steam dry.
- Add potatoes to roasting pan and make sure they are coated with hot duck fat on all sides. Roast 40 to 60 minutes until they are golden and crisp. Turn them every 15 minutes so they will get browned all over.
- Remove from oven and transfer to serving bowl.
- Serve immediately.
