- 2 Tablespoons Olive Oil
- 1 Large Onion (Chopped)
- 2 Large Carrots (Sliced)
- 3 Celery Stalks (Chopped)
- 1 Teaspoon Kosher Salt
- 1/2 Teaspoon Freshly Ground Pepper
- 1 Teaspoon Dried Oregano
- 3 Garlic Cloves (Minced)
- 3 Cups Cooked Shredded Chicken
- 8 Cups Chicken Broth
- Handful Parsley (Roughly Chopped)
- 2 Cups Pasta Of Choice
- 1 Tablespoon Lemon Juice
- In large-size pot heat olive oil over a medium-high heat. Add carrots, onions, and celery. Cook 4 minutes. Add garlic and cook 1 more minute. Add chicken broth and oregano. Season with kosher salt or pepper. Add chicken and bring to boil. Reduce heat to medium low. Cover and cook 15 minutes. Stir in pasta. Cover and boil over a medium heat for 8 minutes until pasta is cooked through. Add parsley and lemon juice. Remove from heat.
- Ladle into bowls and serve warm.
