Sneak whole grains and vegetables into delicious meatballs. Serve with your favorite pasta and marinara sauce or on a Portuguese roll for a satisfying sandwich.

  • 1 Pound Ground Beef
  • 3/4 Cup Cooked Quinoa
  • 1/4 Cup Finely Chopped Onions
  • 1/4 Cup Grated Carrots
  • 1/4 Cup Grated Zucchini
  • 2 Tablespoons Tomato Paste
  • 1 Garlic Clove (Minced)
  • 1 Tablespoon Worcestershire Sauce
  • 1/2 Teaspoon Freshly Ground Pepper
  • 1/2 Teaspoon Kosher Salt
  • 1/2 Teaspoon Dried Oregano
  • 1/2 Teaspoon Dried Thyme
  • 1 Large Egg (Lightly Beaten)
  1. Preheat oven to 450 degrees.
  2. Line large-size baking sheet with parchment paper. Set aside.
  3. In large-size bowl mix together all ingredients until well combined. Shape into 12 to 16 balls. Transfer to prepared baking sheet. Place in oven and roast 15 to 17 minutes until cooked through and golden brown.
  4. Remove from oven and serve hot with your favorite sauce or solo.
