Cranberry Banana Bread is moist, dense and easy to make.

  • 1 1/4 Cups Unbleached Flour
  • 3/4 Cup Oatmeal
  • 1 Tablespoon Baking Powder
  • 1/2 Teaspoon Kosher Salt
  • 3 Bananas (Mashed)
  • 2 Large Eggs
  • 1/3Cup Butter (Softened)
  • 1/2 Cup Sugar
  • 1 Cup Dried Cranberries
  • 1 Teaspoon Fresh Lemon Juice
  1. Preheat oven to 350 degrees.
  2. Grease 9x5 inch loaf pan. Set aside.
  3. In large-size bowl combine flour, oatmeal, baking powder, and kosher salt. Set aside.
  4. In separate large-size bowl combine mashed bananas, eggs, and butter. Add sugar, cranberries, lemon juice. Mix well.
  5. Gently add banana mixture to flour mixture. Stir until just combined. Transfer batter into prepared loaf pan. Place in oven 45 to 50 minutes until lightly browned. Remove from oven. Let cool completely in pan before removing. This should take about an hour.
  6. Turn bread out onto cutting board. Cut into slices and arrange on platter.
  7. Serve
