Gooey Rocky Road Brownies are an amazing and decadent spin on traditional brownies! Holy Smokes!

  • Brownies:
  • 1/2 Cup Butter (Softened)
  • 3 Ounces Unsweetened Chocolate
  • 1 Cup Unbleached Flour
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Kosher Salt
  • 3 Eggs (Room Temperature)
  • 1 1/2 Cups Sugar
  • 2 Teaspoons Vanilla Extract
  • Topping:
  • 1 Cup Chopped Peanuts
  • 1 Cup Dark Chocolate Chip Morsels
  • 1 Cup Miniature Marshmallows
  • 1/3 Cup Chocolate Hot Fudge Topping (Warmed)
  1. Preheat oven to 350 degrees.
  2. Generously grease 9-inch square baking pan. Set aside.
  3. In medium-size saucepan melt butter and unsweetened chocolate over a low heat. Stir frequently. Remove fro heat and let cool.
  4. In small-size bowl combine flour, baking powder, and kosher salt.
  5. In large-size bowl add eggs. Beat until light and fluffy. Add sugar and beat well. Add vanilla. Gradually add cooled chocolate mixture and combine well. Stir in flour mixture just until blended. Pour into prepared baking pan. Place into oven for 25 to 30 minutes until edges slightly pull away from sides of pan.
  6. Remove from oven. Sprinkle chopped peanuts, chocolate chips, and marshmallows over the top. Drizzle chocolate fudge topping. Place back into oven and bake 8 to 12 minutes until lightly browned.
  7. Remove from oven and cool completely. Cut into bars.
  8. Makes About 2 Dozen Brownies
