You certainly don’t have to be vegan to love this delicious chocolate cake. Top with your favorite frosting and top with fresh berries.

  • 3/4 Cup Cocoa
  • 2 1/4 Cups Plus 1/3 Cup Unbleached Flour
  • 2 Cups Sugar
  • 2 Teaspoons Baking Soda
  • 1/2 Teaspoon Kosher Salt
  • 3/4 Cup Olive Oil
  • 1 Teaspoon Vanilla Extract
  • 3 Tablespoons Cider Vinegar
  1. Place oven rack to middle position.
  2. Preheat oven to 350 degrees.
  3. Grease 9 inch round cake pan. Set aside.
  4. In large-size bowl add sugar, olive oil, vanilla extract, and cider vinegar. Mix well.
  5. In medium-size bowl combine flour, cocoa, baking soda, and kosher salt. Gradually add dry ingredients to wet ingredients. Mix well.
  6. Pour batter into prepared cake pan.
  7. Place in oven, on middle rack, for 45 to 55 minutes until toothpick or cake tester inserted into middle of cake comes out clean.
  8. Remove from oven and let cool before turning out onto cake plate. Leave plain or frost with your favorite frosting. You may want to top with fresh berries.
