You certainly don’t have to be vegan to love this delicious chocolate cake. Top with your favorite frosting and top with fresh berries.
- 3/4 Cup Cocoa
- 2 1/4 Cups Plus 1/3 Cup Unbleached Flour
- 2 Cups Sugar
- 2 Teaspoons Baking Soda
- 1/2 Teaspoon Kosher Salt
- 3/4 Cup Olive Oil
- 1 Teaspoon Vanilla Extract
- 3 Tablespoons Cider Vinegar
- Place oven rack to middle position.
- Preheat oven to 350 degrees.
- Grease 9 inch round cake pan. Set aside.
- In large-size bowl add sugar, olive oil, vanilla extract, and cider vinegar. Mix well.
- In medium-size bowl combine flour, cocoa, baking soda, and kosher salt. Gradually add dry ingredients to wet ingredients. Mix well.
- Pour batter into prepared cake pan.
- Place in oven, on middle rack, for 45 to 55 minutes until toothpick or cake tester inserted into middle of cake comes out clean.
- Remove from oven and let cool before turning out onto cake plate. Leave plain or frost with your favorite frosting. You may want to top with fresh berries.
