Pumpkin Apple Muffins are a good way to use up an excess of apples.
- Muffins:
- 2 1/2 Cups Unbleached Flour
- 2 Cups Sugar
- 1 1/2 Tablespoons Pumpkin Pie Spice
- 1 Teaspoon Baking Soda
- 1/2 Teaspoon Kosher Salt
- 2 Lightly Beaten Eggs
- 1 Cup Pumpkin
- 1/2 Cup Canola Oil
- 1 Teaspoon Vanilla Extract
- 2 Cups Peeled & Finely Diced Apples
- Topping:
- 2 Tablespoons Unbleached Flour
- 1/4 Cup Brown Sugar
- 1/2 Teaspoon Cinnamon
- 4 Tablespoons Butter
- Preheat oven to 350 degrees.
- Grease a regular-size muffin pan or line with muffin paper. Set aside.
- In large-size bowl combine flour, sugar, pumpkin pie spice, baking soda, and kosher salt. Stir in lightly beaten eggs, pumpkin, canola oil, and vanilla. Stir until combined. Fold in apples. Spoon into muffin cups.
- In small-size bowl combine flour, brown sugar, and cinnamon. Cut in butter until crumbly. Sprinkle over batter in each muffin cup.
- Place in oven for 35 to 40 minutes until golden brown.
- Remove from oven and gently remove with a knife and cool.
- Makes About 1 Dozen
