The nice thing about pesto is that it can and should be used for more than a plate of pasta.
- 10 Ounces Fresh Basil
- 4 Ounces Fresh Mint
- 1 Cup Pine Nuts
- 1/2 Cup Parmesan Cheese
- 2 Garlic Cloves
- 1/2 Cup Olive Oil
- 1/2 Teaspoon Kosher Salt
- In food processor or blender add 5 ounces basil, pine nuts, and garlic. Pulse until blended. Add mint and remaining basil. Pulse until blended. Add Parmesan and kosher salt. Pulse until blended. Add 1/4 cup olive oil and pulse again until well blended.
- Transfer to jar filling nearly to the top before adding remaining olive oil. Add remaining olive oil. Cover with a lid and refrigerate until ready to use.
