It’s that time of year and many like to tailgate, but don’t want all of the calories. This lighter version of classic chili is truly a touchdown.

  • 2 Tablespoons Olive Oil
  • 1 Pound Ground Turkey
  • 1 Cup Chopped Red Onion
  • 2 Bell Peppers (Seeds Removed & Chopped)
  • 1 1/2 Cups Kidney Beans
  • 1 1/2 Cup Black Beans
  • 2 Cloves Garlic (Minced)
  • 1 Teaspoon Kosher Salt
  • 2 Tablespoons Chili Powder
  • 2 Tablespoons Ground Cumin
  • 3 Cups Diced Tomatoes (With Juice)
  • 2 Cups Salsa
  1. Add olive oil to large-size pot. Add onions and ground turkey over a medium-high heat for 5 minutes until browned. Stir frequently to break up turkey. Add bell peppers, garlic, kosher salt, chili powder, cumin, beans, tomatoes (with juice), and salsa. Bring to boil. Reduce heat and simmer 25 minutes.
  2. Remove from heat and serve with shredded cheese, sour cream sliced avocado, chopped cilantro, or diced green onions.
  3. Serves 6
