Let the kids get in on the baking action by helping to make the indentations or spooning the fruity jam.
- 2/3 Cup Butter (Softened)
- 1/2 Cup Sugar
- 2 Egg Yolks
- 1 Teaspoon Vanilla Extract
- 1 1/2 Cups Unbleached Flour
- 1/3 To 1/2 Cup Jam
- In large-size bowl beat butter for 30 seconds. Add sugar. Beat until combined. Beat in egg yolks and vanilla. Add flour and beat until well combined. Cover and chill 1 hour or until dough is easy to handle.
- Preheat oven to 375 degrees.
- Grease cookie sheet.
- Shape dough into 1-inch balls. Place 1-inch apart on prepared cookie sheet. Using your thumb, make an indentation in center of each ball.
- Place in oven 10 to 12 minutes until bottoms are light brown. If cookie centers puff during baking, re-press centers with the rounded side of a measuring teaspoon.
- Remove cookies from oven and let cool on wire rack. Before serving, fill each center with 1/2 teaspoon jam.
