A delicious way to enjoy the taste of a blueberry muffin!

  • 2 Tablespoons Butter
  • 1/4 Cup Unbleached Flour
  • 2 Tablespoons Brown Sugar
  • 1/2 Teaspoon Ground Cinnamon
  • 1/2 Teaspoon Baking Powder
  • 1/4 Teaspoon Ground Nutmeg
  • 1 Large Egg Yolk
  • 1 Tablespoon Milk
  • 1 Teaspoon Vanilla Extract
  • 1 Tablespoon Fresh Blueberries
  1. Place butter into large-size mug (mug should be at least 12 ounces). Place mug in microwave 30 to 45 seconds until butter has melted. Add all remaining cake ingredients except blueberries. Mix well with a fork and then stir in blueberries.
  2. Place in microwave 60 to 90 seconds until cake pulls away from side and top id dry. Make sure not to overcook.
  3. Cool slightly and serve.
  4. Serves 1
