If you’re planning on making my Apple Fritter Breakfast Cake you must use Vietnamese cinnamon (also known as Saigon Cinnamon). Vietnamese cinnamon is the strongest, richest, and sweetest cinnamon and truly brings out the complex flavor of this cake. You can find it in most higher-end markets or online.

  • 2/3 Cup Dark Brown Sugar (Divided)
  • 2 Teaspoons Ground Vietnamese Cinnamon (Divided)
  • 2/3 Cup Plus 2 Tablespoons Sugar (Divided)
  • 1/2 Cup Butter Softened
  • 2 Large Eggs (Room Temperature)
  • 2 Teaspoons Vanilla Extract
  • 1 1/2 Cups Unbleached Flour
  • 1 Teaspoon Kosher Salt
  • 1 3/4 Teaspoons Baking Powder
  • 1/2 Cup Milk (I Used Whole Milk)
  • 2 Medium Or Large Apples (Peeled, Cored, Chopped)
  1. Preheat oven to 350 degrees.
  2. Grease a Bundt pan and set aside.
  3. In a small-size bowl combine 1 teaspoon cinnamon and 2 tablespoons sugar.
  4. Place peeled, cored, and diced apples in medium-size bowl. Sprinkle with cinnamon sugar mixture and let sit while preparing the cake.
  5. In a medium-size bowl combine 1/3 cup brown sugar with 1 teaspoon cinnamon. Set aside.
  6. In large-size bowl beat butter and 2/3 cup sugar until smooth and creamy. Beat in eggs one at a time. Add brown sugar and cinnamon mixture. Add vanilla.
  7. In medium-size bowl combine flour, kosher salt, and baking powder. Slowly add to butter mixture until blended. Add milk until smooth.
  8. Transfer half of batter to prepared pan. Add apples with the cinnamon sugar mixture. Lightly pat the apples into batter. Transfer remaining batter over apples.
  9. Sprinkle 1/3 cup brown sugar over top of batter. With a knife lightly swirl in brown sugar.
  10. Place in oven 40 to 50 minutes. Remember, that each oven heats differently.
  11. When done toothpick should come out clean.
  12. Remove from oven and let rest 10 minutes before removing.
  13. If you decide to glaze combine 1/2 cup powdered sugar and 2 to 3 tablespoons milk. Drizzle cake with glaze.
  14. Makes 1 Cake
