Delicious muffins that come loaded with a good dose of chocolate and almonds.

  • 1/2 Cup Butter (Softened)
  • 2 Eggs (Room Temperature)
  • 1 Cup Whole Milk
  • 1 Teaspoon Vanilla Extract
  • 2 Cups Unbleached Flour
  • 3/4 Cup Brown Sugar
  • 1 Tablespoons Baking Powder
  • 1 Teaspoon Kosher Salt
  • 2/3 Cup Chocolate Chunks
  • 1/2 Cup Slivered Almonds
  1. Preheat oven to 400 degrees.
  2. Place paper baking cup in each muffin cup or grease each cup in muffin pan.
  3. In large-size bowl beat softened butter and brown sugar. Add eggs and beat until fluffy. Add vanilla and milk. Beat until combined.
  4. In large-size bowl combine flour, baking powder, and kosher salt. Add wet mixture to flour mixture. Stir until just combined. Batter will be a bit lumpy. Stir in chocolate chunks and almonds.
  5. Spoon batter into muffin cups until cups are about 2/3 full.
  6. Place in oven 18 to 20 minutes until muffins are golden.
  7. Remove from oven. Remove muffins from pan and transfer to wire racks to cool before serving.
  8. Makes 12 Muffins
