I certainly have been in a burrito kind of mood as of late. Burritos are so versatile and easy to make. Perfect for a quickie lunch or dinner.  

  • 1 1/2 Pounds Chicken Breasts (Cut Into Strips)
  • 1 Tablespoon Chile Powder
  • 1 Teaspoon Ground Cumin
  • 1/2 Teaspoon Kosher Salt
  • 16 Ounces Salsa
  • 8 Burrito Size Tortillas
  • Lettuce
  • Grated Cheese
  • Sliced Red Onions
  • 1 Bell Pepper (Sliced)
  1. In a large-size skillet cook chicken over a medium-high heat until center is no longer pink. Stir in chile powder, cumin, kosher salt, and salsa. Cook another 5 minutes.
  2. Spoon filling onto tortillas. Top with lettuce, grated cheese, red onions, and bell pepper slices. Fold and serve.
  3. Makes 8 burritos
