What on earth is sodium aluminum phosphate, anyway? When you make your own pancake mix you’ll know the ingredients that go into your mix.

  • 3 1/2 Cups Old Fashioned Oats
  • 4 Cups White Whole Wheat Flour (King Arthur)
  • 1 Cup Unbleached Flour
  • 3 Tablespoons Sugar
  • 3 Tablespoons Baking Powder
  • 1 Tablespoon Salt
  • 1 Tablespoon Baking Soda
  • 1 Cup Vegetable Oil
  • To Make Pancakes
  • 1 Cup Homemade Mix
  • 1 Cup Buttermilk
  • 1 Large Egg
  1. To Make Homemade Mix: Grind oats in food processor until finely chopped (make sure not a powder consistency). Place flours, oats, and other dry ingredients into mixing bowl with paddle attachment. While mixer is running on slow speed, slowly drizzle oil into bowl to blend with dry ingredients. Store in airtight container for two weeks at room temperature or indefinitely in refrigerator or freezer.
  2. To make pancakes: In large-size bowl whisk together 1 cup homemade mix, 1 cup buttermilk, and 1 large egg. Mixture may look thin, but that’s ok. Let matter rest for 20 minutes. Oats will soak up liquid and mixture will thicken up. Heat a lightly greased griddle. Drop batter in 1/4 cup to make 4-inch pancakes. When edges look dry and bubbles come to surface without breaking flip pancakes over to other side and finish cooking for about 2 minutes. Serve immediately.
  3. Makes 10 Cups Of Dry Mix (Enough For 50 To 80 Pancakes)
