Using lentils cuts the carbs and ups the fiber in this dish.
- 2 Shallots (Peel & Chopped)
- 1 Pound Chicken Breasts (Cut Into 1 Inch Pieces)
- 1 Tablespoons Olive Oil
- 1 Cup Cooked Lentils
- 1 Cup Cooked Rice
- 1 Cup Chicken Broth
- 1 Teaspoon Kosher Salt
- 1/4 Cup Fresh Basil (Chopped)
- In large-size skillet heat olive oil over a medium-high heat. Add shallots and chicken. Cook 3 minutes until chicken is browned. Stir occasionally. Add cooked lentils to skillet. Cook 1 minute. Stir often. Add cooked rice and chicken broth and cook 5 minutes. Stir often. Add kosher salt. Remove from heat and transfer to serving bowl. Garnish with basil.
