Elegant Poached Pears

For a simple, but sublime dessert, infuse in-season pears with wine. Serve poached pears with berries, pistachios or mascarpone.

  • 2 Cups Dry Red Wine
  • 1 Cup Pomegranate Juice
  • 1 Cup Water
  • 1/4 Cup Packed Brown Sugar
  • 2 Cinnamon Sticks
  • 8 Whole Cloves
  • 4 Whole Allspice
  • 6 Bosc Pears (Peeled)
  1. In 6-quart pot add wine, pomegranate juice, water, brown sugar, cinnamon, cloves, and allspice. Bring to a boil. Reduce heat to a simmer, uncovered, for 10 minutes. Add pears. Turn heat back up to boiling. Reduce heat, cover, and simmer 10 to 15 minutes.
  2. Remove from heat. Cool pears 2 hours in syrup.
  3. Serve plain or with berries, pistachios or mascarpone.
