This salad is best when chilled overnight.

  • 2 Celery Ribs (Chopped)
  • 1 Jalapeño (Seeded & Sliced)
  • 10 Cherry Tomatoes (Halved)
  • 2 Spring Onions Including Green Part (Chopped)
  • 1 Carrot (Chopped)
  • 2 Garlic Cloves (Sliced Very Thin)
  • 2/3 Cup Halved Olives
  • 1 Red Bell Pepper (Seeded & Chopped)
  • 1 Cup Gigante Beans
  • 1/2 Cup Italian Dressing
  1. In large-size bowl combine all ingredients. Cover with plastic wrap and chill for at least 1 hour.
  2. Serve cold or at room temperature.
  3. Serves 4
