  • 3 Kohlrabi (Peeled)
  • 4 Ounces Rice Noodles (Cooked And Cooled)
  • 1 Thai Red Chile (Sliced)
  • 1/2 Jalapeño (Sliced)
  • 1/2 Avocado (Sliced)
  • 1/4 Cup Chopped Cilantro
  • 1/4 Cup Chopped Basil
  • 1/4 Cup Crushed Peanuts
  • Lime Slices
  • Dressing
  • 1 Lime Zested And Juiced
  • 2 Tablespoons Fish Sauce
  • 2 Tablespoons Rice Vinegar
  • 1 Garlic Clove (Minced)
  • 1 Teaspoon Minced Ginger
  1. In small-size jar with lid add lemon juice, lemon zest, fish sauce, rice vinegar, garlic, and ginger. Place in refrigerator until ready to use.
  2. Slice kohlrabi into very thin slices. Add to medium-size bowl along with chile peppers and dressing. Place in refrigerator 1 hour.
  3. Remove from refrigerator and toss with noodles, cilantro, basil, and crushed peanuts.
  4. Serve cold or at room temperature with avocado slices and lime slices.
  5. Serves 2
