Staying on healthy eating track is easy with this excellent make-ahead bowl.
- 3 Kohlrabi (Peeled)
- 4 Ounces Rice Noodles (Cooked And Cooled)
- 1 Thai Red Chile (Sliced)
- 1/2 Jalapeño (Sliced)
- 1/2 Avocado (Sliced)
- 1/4 Cup Chopped Cilantro
- 1/4 Cup Chopped Basil
- 1/4 Cup Crushed Peanuts
- Lime Slices
- Dressing
- 1 Lime Zested And Juiced
- 2 Tablespoons Fish Sauce
- 2 Tablespoons Rice Vinegar
- 1 Garlic Clove (Minced)
- 1 Teaspoon Minced Ginger
- In small-size jar with lid add lemon juice, lemon zest, fish sauce, rice vinegar, garlic, and ginger. Place in refrigerator until ready to use.
- Slice kohlrabi into very thin slices. Add to medium-size bowl along with chile peppers and dressing. Place in refrigerator 1 hour.
- Remove from refrigerator and toss with noodles, cilantro, basil, and crushed peanuts.
- Serve cold or at room temperature with avocado slices and lime slices.
