Pureed peas make a vibrant beautiful soup!
- 2 Cups Peas (Cooked)
- 15 Ounces Vegetable Broth
- 1/4 Cup Olive Oil
- Juice Of 1 Lemon
- 1/2 Teaspoon Kosher Salt
- In blender or food processor blend peas, kosher salt, and vegetable broth until very smooth. With motor running, slowly pour in olive oil in steady stream to emulsify mixture. Add lemon juice. Transfer to large bowl and cover with plastic wrap Place in refrigerator for at least 1 hour before serving.
