Beautiful summer corn gets blended with sour cream for a refreshing soup.

  • 6 Cups Fresh Corn Kernels
  • 1 Garlic Clove
  • 1 1/4 Cups Vegetable Broth
  • 1 Cup Sour Cream
  • 1 Teaspoon Kosher Salt
  • 2 Green Onions (Thinly Sliced)
  • 2 Teaspoons Hot Chili Oil
  1. In medium-size pot combine corn kernels, garlic, and vegetable broth. Turn heat to medium-high and cook 10 minutes until corn is nice and tender. Remove from heat and let cool slightly. Transfer to blender. Add broth, kosher salt, and sour cream. Purée until smooth. Transfer to large-size bowl and refrigerate until cold.
  2. Remove from refrigerator and divide soup among 4 bowls. Drizzle with chili oil and garnish with green onions.
  3. Serves 4
