Celebrate summer with a zesty twist on a traditional summer salad. This salad is perfect for picnics and outdoor barbeques.

  • 3 Cups Lettuce (Romaine Or Iceberg)
  • 3 Cups Corn
  • 1 1/2 Cups Black Beans (Drained & Rinsed)
  • 1/2 Cup Chopped Olives (Black Or Green)
  • 2 Cups Diced Tomatoes
  • 2 Tablespoons Fresh Lime Juice
  • 1 Tablespoon Fresh Chopped Cilantro
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Kosher Salt
  1. Place diced tomatoes to medium-size bowl. Mix in lime juice, kosher salt and chopped cilantro. Let sit on at room temperature 5 minutes.
  2. Toss together lettuce, corn, black beans, olives, tomatoes with lime juice/cilantro, and olive oil.
  3. Serve chilled or at room temperature.
  4. Serves 4
