Celebrate summer with a zesty twist on a traditional summer salad. This salad is perfect for picnics and outdoor barbeques.
- 3 Cups Lettuce (Romaine Or Iceberg)
- 3 Cups Corn
- 1 1/2 Cups Black Beans (Drained & Rinsed)
- 1/2 Cup Chopped Olives (Black Or Green)
- 2 Cups Diced Tomatoes
- 2 Tablespoons Fresh Lime Juice
- 1 Tablespoon Fresh Chopped Cilantro
- 2 Tablespoons Olive Oil
- 1 Teaspoon Kosher Salt
- Place diced tomatoes to medium-size bowl. Mix in lime juice, kosher salt and chopped cilantro. Let sit on at room temperature 5 minutes.
- Toss together lettuce, corn, black beans, olives, tomatoes with lime juice/cilantro, and olive oil.
- Serve chilled or at room temperature.
