Part bean salad and part salsa dip, cowboy caviar is a vibrant combination of black-eyed peas, corn, tomatoes, onions, and avocado. I like to pour it over grilled flank steak, grilled chicken, over greens, or even over brown rice.
- 2 Cups Black-Eyed Peas (Rinsed/Drained)
- 1/2 Cup Corn
- 1 Medium Tomato (Chopped)
- 1 Medium Avocado (Chopped)
- ½ Medium Red Onion (Chopped)
- 2 Tablespoons Chopped Fresh Cilantro
- 1/2 Teaspoon Ground Cumin
- 1 Teaspoon Kosher Salt
- 3 Tablespoons Fresh Lime Juice
- In medium-size bowl combine beans, corn, tomato, avocado, onion, cilantro, cumin, kosher salt, and lime juice. Cover with plastic wrap and chill until ready to serve.
