Here is a delicious and simple recipe that harnesses the pure essence of the tomatoes, that can be used either as a light garnish for grilled fish or as a refreshing drink. You may even want to try it in a Bloody Mary.
- 14 Large Heritage Tomatoes
- 1 Stalk Fresh Basil
- 1/2 Teaspoon Kosher Salt
- 1/4 Teaspoon Freshly Ground Pepper
- Cut tomatoes into a rough dice and place in large-size bowl. Add kosher salt, pepper, and entire basil stalk. With a hand blender or food processor purée until smooth. Let sit at room temperature for 1 hour. Pour into cheesecloth over large-size bowl and allow to drip through. Transfer to container with tight fitting lid and place in refrigerator for up to 2 days.
