I’ll admit that many days I’m short on time or just plain lazy and need a good bar cookie recipe. These cookies are so delicious and with the rolled oats you almost feel like you’re eating something healthy.
- 1/2 Cup Butter (Softened)
- 3/4 Cup Dark Brown Sugar
- 2 Eggs
- 1 Tablespoon Vanilla Extract
- 1 Cup Unbleached Flour
- 1 Teaspoon Baking Powder
- 1/2 Teaspoon Kosher Salt
- 1/4 Cup Milk
- 1 1/2 Cups Rolled Oats
- 1 1/2 Cups Dark Chocolate Chunks
- 1 Cup Sweetened Shredded Coconut
- Preheat oven to 350 degrees.
- Grease 9 inch baking pan with cooking spray. Set aside.
- In large-size bowl cream butter and brown sugar. Add eggs and vanilla. Combine well. In medium-size bowl combine unbleached flour, baking powder, and kosher salt. Add flour mixture to brown sugar mixture in thirds, alternating with milk. Stir in oats, chocolate chunks, and coconut until combined. Transfer batter to prepared pan. Smooth out evenly. Place in oven for 30 minutes until done. Remove from oven and let cool completely. Cut into squares and serve.
